Bacon Dumplings

Serves 4

80 g bacon cut into fine cubes

½ onion (40 g)

Other ingredients:
150 g firm white bread or ready prepared dumpling bread
20 g butter (1 tbsp)
40 g flour (2 tbsp)approx. 100 ml milk or water2 eggs

1 tbsp parsley or chives, finely chopped

  • Cut the bread into small cubes
  • Sauté the finely chopped onions in the butter, add to the bread and stir well
  • Add the flour and bacon and mix
  • Beat together the eggs, milk, parsley and salt, pour over the bread and stir well
  • Leave the mixture to soak for around 15 minutes, then form into dumplings and simmer in a half-covered pan of salted water until cooked

Tips & Recommendations

  • Serve the bacon dumplings in a hearty meat soup, as a side dish with roast pork (loin) and as a main dish with salad.
  • Use dry dumpling bread and let the mixture soak well.
  • If you use a spoon or ladle to form the dumplings the surface will be smoother and the dumplings will not fall apart so easily.
  • If you prefer, you can roast the bacon before adding it to the mixture.
